Grown in the heart of Caldas and processed under the watchful eye of Jorge Uribe, this Red Honey lot reflects a commitment to sustainability and artisanal methods rarely seen today.

Produced through a 16-day fermentation—384 hours in total—this Red Honey process brings out vibrant sweetness and complexity, with distinct notes that vary depending on the season. Sunny days yield rich, liqueur-like depth, while rainy periods enhance the coffee’s natural sweetness, creating a truly dynamic cup.

The farm is home to 21,000 coffee trees and is surrounded by guaduales, native water-retaining plants that not only support a cool, moist microclimate but also foster biodiversity by attracting seed-dispersing wildlife. This living ecosystem contributes to a thriving natural balance that is felt in every sip.

Under Jorge’s meticulous care, every step of the harvest is intentionally managed—from the timing of cherry selection to the drying process under the sun. What’s more, the farm is a place of social inclusion, where elder harvesters bring generations of wisdom to the process, preserving traditions while giving back to the community.
